- In a large mixing bowl, combine 2 cups of fresh spinach (wilted and chopped), 1 cup of ricotta cheese, 1 cup of shredded mozzarella cheese, 1/2 cup of grated Parmesan cheese, 2 cloves of garlic (minced), 1/2 teaspoon of dried oregano, and a pinch of salt and pepper. Mix until all ingredients are well combined.
- Preheat your oven to 400°F (200°C). Divide 1 pound of pizza dough into four equal portions. On a lightly floured surface, roll each portion into a 7-8 inch circle.
- Spoon a quarter of the spinach filling onto one half of each dough circle, leaving a 1-inch border around the edge. Fold the other half of the dough over the filling to create a half-moon shape. Press the edges together and crimp with a fork to seal.
- Place the calzones on a parchment-lined baking sheet. Brush the tops with 1 beaten egg (this gives them a beautiful golden color). Using a sharp knife, make a few small slits on top of each calzone to allow steam to escape. Bake in the preheated oven for 20-25 minutes, or until the calzones are golden brown and crispy.
