This Chinese Chicken Salad is a delightful dance of tender, juicy chicken, crunchy veggies, and a sesame-ginger dressing that packs a punch. Topped with crispy wonton strips and roasted peanuts, this salad brings flavor, texture, and satisfaction in every bite!

  1. Season boneless chicken breasts with salt and pepper. Heat a skillet over medium heat with a splash of oil. Cook chicken for about 6-7 minutes per side or until fully cooked. Let it rest, then slice into thin strips.
  2. In a small bowl, whisk together 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, 2 tablespoons of rice vinegar, 1 tablespoon of honey, 1 teaspoon of grated ginger, and 1 clove of garlic (minced). Add a pinch of red pepper flakes if you're feeling spicy!
  3. In a large mixing bowl, combine 2 cups of shredded cabbage (mix of green and purple for color), 1 cup of shredded carrots, 1 sliced red bell pepper, 1/2 cup of snow peas (thinly sliced), and 4 chopped green onions.
  4. Add the sliced chicken to the salad, drizzle with the sesame-ginger dressing, and toss well. Garnish with a handful of roasted slivered almonds and crispy wonton strips.
  5. Plate the salad, sprinkle with fresh cilantro, and squeeze a little lime juice on top for extra zing!
