Chicken Piccata is a bright and tangy dish that brings a burst of flavor with every bite! Tender chicken breasts are sautéed to perfection and smothered in a lemony butter sauce with capers. It’s a light and refreshing dish that’s as easy to make as it is delicious!

- Place 4 boneless, skinless chicken breasts between two sheets of plastic wrap and pound them to about 1/2-inch thickness. Season both sides with salt and pepper. Dredge the chicken lightly in 1/2 cup of all-purpose flour, shaking off any excess.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, melt 2 tablespoons of butter over medium heat. Add 2 minced garlic cloves and sauté for about 30 seconds, until fragrant. Pour in 1/2 cup of chicken broth and 1/4 cup of fresh lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 3 minutes, or until the sauce is slightly reduced.
- Stir in 2 tablespoons of capers and 1/4 cup of chopped fresh parsley. Return the chicken breasts to the skillet and spoon the sauce over them. Let the chicken simmer in the sauce for an additional 2 minutes to absorb the flavors.
- Plate the chicken breasts and pour the remaining sauce over the top. Garnish with extra fresh parsley and lemon slices if desired. Serve hot with a side of pasta, rice, or steamed vegetables for a complete meal.
