- Place 4 boneless, skinless chicken breasts between two sheets of plastic wrap and pound them to about 1/2-inch thickness. Season both sides with salt and pepper. Dredge the chicken lightly in 1/2 cup of all-purpose flour, shaking off any excess.
- Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
- In the same skillet, melt another 1 tablespoon of butter. Add 8 ounces of sliced cremini mushrooms and cook for about 5 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.
- Add 2 minced garlic cloves to the skillet and sauté for about 30 seconds, until fragrant. Pour in 3/4 cup of Marsala wine and 1/2 cup of chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 5 minutes, or until the sauce has reduced by half.
- Stir in 1/4 cup of heavy cream and 1 tablespoon of chopped fresh parsley. Return the chicken breasts to the skillet and simmer for another 3-4 minutes, spooning the sauce over the chicken, until heated through and coated with the sauce.
- Plate the chicken breasts and spoon the mushroom Marsala sauce over the top. Garnish with extra fresh parsley if desired. Serve hot with a side of mashed potatoes, pasta, or a fresh salad for a complete meal.
