This isn't your grandma's tuna salad! We're talking gourmet here—tender chunks of tuna mixed with crisp veggies, creamy avocado, and a zesty lemon-dijon dressing. Perfectly balanced with a hint of capers for a salty pop, this salad is a fresh, vibrant take on a classic favorite!

Ingredients

Directions

  1. In a large bowl, combine 2 cans (about 10 oz each) of high-quality tuna in olive oil, drained. Use a fork to break up the tuna into chunks, but not too much—you want those hearty pieces!
  2. Dice 1 large avocado, 1 cup of cherry tomatoes, and 1 small cucumber. Finely chop 1/4 red onion and 2 tablespoons of fresh parsley. Toss these veggies into the bowl with the tuna.
  3. Add 2 tablespoons of capers and 1 tablespoon of chopped fresh dill to the bowl. These little guys are going to add a burst of flavor that takes your tuna salad from zero to hero.
  4. In a small bowl, whisk together 2 tablespoons of lemon juice, 1 tablespoon of Dijon mustard, 3 tablespoons of extra virgin olive oil, salt, and pepper to taste. Pour this over your tuna and veggies.
  5. Gently toss everything together until the tuna and veggies are evenly coated in that luscious dressing. Divide the salad among four plates or bowls. Garnish with extra dill or parsley if you’re feeling fancy.
  6. This salad is best enjoyed fresh, so dig in and enjoy the flavors of a gourmet lunch or light dinner. Pair with a glass of chilled white wine for maximum effect!
